A Six Pack of Pancake Recipes

Pancakes, flapjacks or hotcakes. Whatever you call them, they’re delicious. Layered with butter, syrup or any fruit under the sun. These recipes will have you hopping out of bed!sixpancakes-2

The following recipes will make about 6-7 silver dollar pancakes or 3-4 regular size pancakes. Double the recipe as necessary for the amount you need. Begin by melting the butter, then add the sour cream and egg. Mix well. Add dry ingredients and mix again. Add milk and finish whisking the batter. Make pancakes as usual. 

Option #1: Fluffy and Straightforward

3 tbs melted butter
½ cup sour cream
1 egg
½ cup milk
1 tsp vanilla
1 cup flour
1 tbs sugar
½ tsp salt
½ tsp baking soda
1 tsp baking powder

These are really just straightforward and delicious pancakes.

Option #2: Blueberry Bomb

Add ½ cup fresh blueberries and 1 teaspoon lemon zest to the recipe above. Make fresh blueberry syrup to pour on top.

Blueberry Syrup:

1 cup fresh blueberries
1 cup water
½ cup sugar
2 tbs lemon juice
2 tbs cornstarch
2 tbs water

Add blueberries, water, sugar and lemon juice to a small sauce pan. Bring mixture to a rolling boil. Blueberries will begin to burst. If they don’t, mash them with the back of a spoon. Mix cornstarch and additional water to create a paste, and add this to the syrup. It will help thicken the mixture. Continue to cook over medium heat. Stir to prevent sticking. Syrup can be used immediately as is or you can run through a strainer to remove the large blueberry bits. If you opt for the smoother syrup option, double all amounts.

Option #3: Cinnamon Roll Pancakes

Add 1 teaspoon cinnamon and ½ teaspoon nutmeg to base recipe. Top with cream cheese syrup. Sprinkle with cinnamon sugar.

Cream Cheese Syrup:
4 oz cream cheese
4 tbs melted butter
1 cup powdered sugar
1 tsp vanilla
½ tsp salt
2-4 tbs water

Mix cream cheese and melted butter until smooth. Mixture should be runny. Add powdered sugar and vanilla. Mix until combined. Add water until consistency is spoonable. The warmth of the pancakes will help with the texture.

Option #4: Fluffernutter Pancakes

4 tbs melted butter
½ cup peanut butter
1 egg
½ cup milk
1 tsp vanilla
1 cup flour
1 tbs sugar
½ tsp salt
½ tsp baking soda
1 tsp baking powder

(We replaced the sour cream with peanut butter and increased the melted butter from the original recipe.)

Top pancakes with warmed marshmallow fluff and more peanut butter if desired.

Option #5: Carrot Cake Pancakes

3 tbs melted butter
1/4 cup sour cream
1 egg
½ cup milk
½ cup shredded carrot
1 tsp vanilla
1 cup flour
½ tsp cinnamon
¼ tsp ginger
1 tbs sugar
½ tsp salt
½ tsp baking soda
1 tsp baking powder
¼ cup raisins

Top pancakes with cream cheese syrup from cinnamon roll recipe. Top with crush walnuts or pecans.

Option #6: Triple Chocolate Pancakes (these are more of a dessert than breakfast!)

4 tbs melted butter
¼ cup sour cream
1 egg
¾ cup milk
1 tsp vanilla
1 cup flour
¼ cup cocoa
1 tbs sugar
½ tsp salt
½ tsp baking soda
1 tsp baking powder
½ cup chocolate chips

Make pancakes as usual. Top with chocolate ganache, more chocolate chips and whipped cream.

Chocolate Ganache:

1 cup chocolate (semisweet chips work well)
½ cup heavy cream

Bring cream to a boil. As soon as bubbles begin to appear, take off heat and pour over chocolate chips. Whisk until fully incorporated and no lumps exist. Use while still warm.

Pancake Quick Tips:

I use my panini press (it has a smooth surface with no griddle marks) to cook pancakes quicker by cooking both sides at once.

Make smaller silver dollar pancakes to finish quicker so everyone gets warm, fresh pancakes.

Place finished pancakes in a pan covered with foil to keep warm.

Use an ice cream or cookie scoop to have perfectly even pancakes.

The above recipes can be used for waffles too.

Create a pancake bar by having a variety of toppings available and let everyone pick their mix-ins like chocolate chips, chopped fruits and nuts. Treat the experience the same way as an omelet bar.
