I am a hard core peanut butter fan. Like, I eat spoonfuls of it as a snack. I dip cookies, candy bars, marshmallows, you name it. I mean, I’m approaching Joey Tribiani Peanut Butter Fingers territory. These cookies are packed with peanut butter and then I took it one step further by sandwiching them around a Colts Bolt. This dessert is not for the faint of heart. This dessert is not for the fair weather peanut butter fan, it’s for the serious addict. Beware.
1 cup butter
1 cup peanut butter (I used smooth, crunchy is good too)
1 cup white sugar
1 cup brown sugar
2 1/2 cup flour
1 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
Beat butter, peanut butter and sugars. I made this in a bowl with a spatula, it’s just as easy to throw everything into a mixer. Add eggs one at a time, followed by dry ingredients.
Scoop into 1 inch balls. I flattened mine and used a fork with flour to give them the signature peanut butter cookie lines.
Bake at 350° for 10-12 minutes.
If you put the sandwiches together while the cookies are still warm, you can just start to melt the chocolate of the Bolt. It is a delicious peanut butter experience.
