I love a warm dessert with a big scoop of ice cream. But I don’t always love the giant mess that usually accompanies those lovely desserts. These quick peach cobblers are super simple and can be made even faster than we do here.
2-pack of Finally Ginger Original Ginger cookies
1 tbs. butter
1/2 cup brown sugar
1/2 cup pecans
1 tsp. cinnamon
4 mini cobblers
In a food processor, combine cookies, brown sugar, pecans and cinnamon.
Pulse until a loose crumble. You can leave chunky pieces or grind it down to a fine meal. Or, if you don’t have a food processor, just chop the cookies and pecans and toss with the sugar and cinnamon.
Cut up the peaches – roughly 1/2 of a peach per serving. I have these over-sized oven-proof ramekins, and they were great for this. I sprinkled a bit of cinnamon directly onto my peaches (not necessary), but I love extra flavor.
Top peaches with a few slivers of butter and spoon crumble mixture over the top. This cookie was perfect. I love ginger with peach and the addition of cinnamon puts the whole thing over the top.
Bake at 350° for 15-20 minutes until crumble top is browned and crunchy and peaches are soft. Serve with a scoop of ice cream.
